. . . . . . and not all about chocolate!
I baked on Easter Sunday. . . . . . . . . . a fresh raspberry cake. I've
shared the recipe before and it's really yummy - here's the link if you're interested
Also made a quick batch of muffins and these I admit to being a mix - Krusteaz
Cranberry Orange which are really good. The box contains a can of real cranberries
in an orange sauce making them moist and not too sweet.
So, with Easter gone, Spring most certainly here - enveloping us with every shade
of green, and of course tons of pollen - and me making plans to travel very soon,
life is busy.
Hoping your Easter celebrations were happy times with family and friends.

ReplyDeleteDear Mary, I love it all. Especially the little Easter Bunny and Egg decorations which adorn your tasty looking muffins. I like everything baked with buttermilk...so I will most certainly try your Raspberry Buttermilk Cake.

The cake sounds wonderful! Perfect for Easter. I use the Krusteaz mixes sometimes too. Very good. Love the way you displayed the muffins.

ReplyDeleteThey are good - even better next day or second day so you can make them ahead! Could decorate with a flower or drizzle with icing to gussie them up a bit!

Hi Mary. I'm back to tell you that I did use the Krusteaz mix, but I made it in a loaf pan instead of making muffins. Delicious! Easy and I didn't have to go out and buy a bunch of baking products that I probably won't use again. I just don't do much baking, and when I do it's gluten free. Thanks for sharing the mix on your blog. The loaf was a big hit. Hugs.
DeleteI came to buttermilk late, substituting regular milk and lemon juice in recipes. However, once I baked with the real thing and realized how wonderful the results are, I'm not going back! The raspberry cake sounds yummy, as do the muffins.

ReplyDeleteThank you so much for your Easter greetings on my blog. Those muffins look just wonderful. I made carrot cupcakes that were jammed full of carrots and pineapple. Now I will be watching for the muffin mix.
ReplyDeleteThese sound delicious Mary - I wish I could try your Krusteaz mix too, I am sure we cannot get it here. By the way if you make my choc lava cake it is best cooked in a loaf tin so that it is deeper, I only have one loaf tin and that was being used for the nut roast at the time.

DeleteAs I'm trying to watch my waistline for the upcoming cruise, which always means eating more often than I do here at home, I'm not going to bake again before leaving - but will try it out on my return. Of course I do plan a lot of onshore walking to see the lovely Sicilian historic landmarks, that will help!
