Yesterday I mentioned a 'fishy' recipe I was planning to make for
our supper. I was given a copy of a great Fish Soup recipe recently,
after sharing a bowl of it made by my great neighbor Bob.

For my version I used haddock and salmon. Also threw in a can of
chopped clams along with the juice + the 8 oz. bottle of clam juice
in the original recipe, and the 1/2 cup of Sauvignon Blanc.
I did use fresh chopped tomatoes as I had them on hand, also
fresh snipped thyme from my garden pot.
Due to our new eating regime which means as little sodium as
possible, I did not add any salt and found it didn't require any, it
was perfect without! I did cut down a bit on the olive oil, 4 Tblsp
rather than 6 - it was sufficient to sauté the aromatics.
This is a fabulous fish/seafood main dish soup or stew.
I wouldn't hesitate to serve to company. It will become a
staple dish for us as we don't eat meat and often rely on
fish/seafood for our protein.
The recipe is so easy. I like how additional info shared in
the recipe notes included tweaking it with other ingredients,
such as potatoes, white beans and other veggies that will
make it different on some occasions.
I served this last night alongside a mixed green salad with a
drizzle of ginger dressing. Although we would have enjoyed the
suggested crusty bread to mop up the liquid, we are also
trying to cut back on that also due to the sodium content!

Indeed when seriously cutting back on sodium content, we are forced to cook our own healthy meals. We too use mainly fish. Only on Sunday's we have a thin little piece of grass fed beef tenderloin. I got dizzy several months ago and figured out it was due to lack of iron and when searching for good sources, that is one of them.
Stay cozy and warm, we have such mean and nippy strong winds and frost tonight 23°F with lots of rain during past night...
Some planters are moved back inside the greenhouse.

Oh yes, I almost forgot that St. Patrick‘s Day is just round the corner! Not that it is really celebrated here (apart from at the Irish Pub, obviously), but nevertheless I would not say no to your pistachio muffins with Irish cream!

ReplyDeleteThe stew sounds wonderful. You could try making Tuscan bread without salt. When we were in Italy all the bread we had was salt free, as well as the butter. Here is a recipe to try.

I made minestrone soup yesterday and will make your fish stew next …… so comforting in the cold weather ( & when you’ve got Covid 😂🤣 ) You are doing so well with cutting down on the salt ….. I find it difficult as salt really does bring out the flavour in things but, I’m taking a leaf out of your book and am trying to cut down. ReplyDeleteI have been away so long (a long story too) that catching up is hard but a belated thank you for the thoughtful comment on my February post. Funnily enough I enjoy making fish stew - and fish curry - in France they call it bouillabaisse, and often puree the soup, which I don't like so much. My little dog always has a 'fishy friday' too when I feed him sardines or mackerel, which he adores almost as much as crisps!!
