Pizza fast. . . . . . .


Need a quick tasty something to nibble on a summer evening?

Take a readymade frozen cheese pizza base - this one from LIDL.
Bake directly on rack at 400F for 12 of the 14 minutes cooking time.
Remove on a baking sheet.
Break open a large size ball of Buratta cheese and spread quickly
 over crust, don't fuss, it should look rustic.
Put back in the oven on the baking sheet and bake 3-4 minutes longer
 to finish crust and warm the cheese.

Remove and add toppings of choice.
I oven roasted a load of small mixed cherry and plum tomatoes
with a sliced shallot, garlic, a couple of mild chili peppers for a bit of heat,
olive oil, salt and black pepper.
For green, some arugula and freshly torn basil leaves.

  1. Looks great! I am making pizza from scratch tonight and we are trying out our pizza oven we bought a couple of years ok...We tried it once and burnt everything. Hopefully this time will be better!

  3. That looks so good! Never thought of using burrata on pizza. Will have to give that a try. I made a pizza the other night with a Trader Joe's flatbread pizza crust (have never seen a cheese crust anywhere) and used a lot of veggies, fresh basil and fresh mozzarella.

  4. That looks so delicious Mary - I am off to Lidl tomorrow and will check whether or not we can get those frozen cheese bases here. I don't like a readymade bought pizza as the toppings are so skimpy, and don't necessarily have what I would choose on them.

  5. These plain cheese ones are made in Italy for Lidl and I keep a couple in the freezer for a quick meal - there are many with other toppings but I prefer to add my own fresh things. The moist burrata mozzarella takes it to another level.
